Ooey Gooey Chocolate Chip Blondies

Ready for some melt-in-your-mouth chocolatey blondies? I know I am.

This recipe has been a favorite of mine for SO long and I can’t believe it’s taken me this long to share it!

Quick background story…when I was making these the other day for this post & the recipe video, Matt saw that the base of the batter consisted of – none of than – chickpeas (!!) and was totally turned off. I told him to trust me and that they would be really good, but kid was definitely not keeping the faith. Well about an hour or so later when they were finally ready for a taste test…he could not believe how delicious they were, couldn’t stop raving about them, and has been gobbling them down ever since. Oh, and Matt hates beans. Lol!

Not only is this recipe super tasty, it’s SO easy! Literally throw a bunch of ingredients in a food processor, pour the better in a pan, and you’re ready to rock ‘n’ roll. My kinda recipe.

So let’s get right down to it, shall we?

 

Supplies:

Food processor or high speed blender (ie Vitamix)

Parchment paper

Bread loaf pan

 

Ingredients:

1 can of chickpeas, rinsed

1/2 cup peanut butter (other but butters should work just fine if you want to sub)

3/4 cup maple syrup

2 tsp vanilla

1/4 tsp baking powder

1/4 tsp baking soda

1/2 cup chocolate chips

 

Directions:

  1. Preheat oven to 350°
  2. Add all ingredients, except for chocolate chips, into food processor. Blend until smooth.
  3. Add in chocolate chips, fold in with rubber spatula or spoon.
  4. Line loaf pan with parchment paper.
  5. Pour batter into lined pan. Sprinkle with extra chocolate chips if desired.
  6. Bake at 350° for 1 hour, or until toothpick comes out clean.
  7. Let cool for minimum 20 minutes. *If you want neat & tidy cut bars, refrigerate for at least 1 hour before slicing. If you are like me (and want to taste them warm and gooey and don’t mind if they’re a little messy) go ahead and cut them after cooling for 20-30 min.


Okay, who is trying these?? Cannot wait for you guys to test them out for yourselves! You’ll want to make these over and over again…I just know it!

    Hi! I know you practice intuitive eating but I was wondering if you have the calorie /nutritional info for these?
