Easy Sourdough Pancakes

In this post, learn how to make sourdough pancakes for an easy, healthy breakfast the whole family will love.

I am so excited to share with you guys how to make sourdough pancakes in today’s post! Not only are these pancakes tasty, they are also super healthy.

When making something from sourdough, you are utilizing sourdough starter vs yeast you would buy at the grocery store. The starter is basically a symbiotic colony of microbes (aka healthy bacteria) and the starter creates a rise rather than yeast. Since a sourdough starter is a fermented food, it is adding a whole layer of nutritional benefits in addition to creating the rise in bread products.

What is a sourdough starter?

The two main components in a sourdough starter are wild yeast and bacteria (aka lactic acid-this is what gives it the sour tang). Yeast makes enzymes that break down the flour in a few different ways. Fermentation breaks down the gluten creating a lower gluten end product. The yeast also breaks down phytic acid, which is an anti-nutrient that binds to nutrients in your intestinal tract keeping you from absorbing them into your body. By breaking down the phytic acid, you are increasing the bioavailability of the nutrients contained in the grain which results in more nutrition for you. All around, this makes for a much healthier food!

You can make this recipe one of two ways. You can either feed your starter in advance so it is light, bubbly and active or you can use un-fed starter. I have a whole post on how to make your own sourdough starter here. I typically feed my starter the night before making these pancakes to result in a lighter, fluffier pancake. Now let’s dive into how to make sourdough pancakes!

Ingredients:

2 cups Sourdough Starter

2 Eggs

2 tbsp Melted Butter

2 tbsp Maple Syrup

1 tsp Baking Powder

Instructions:

  1. To a bowl, add sourdough starter, eggs, melted butter, maple syrup and baking powder
  2. Mix all ingredients together to form a batter
  3. Ladle batter onto a hot, buttered skillet
  4. Wait for pancakes to get bubbly on the top and golden brown on the bottom
  5. Flip pancakes and wait until other side also becomes golden brown
  6. Enjoy!

  4. Wait for pancakes to get bubbly on the top and for bottoms to be golden brown
  5. Flip pancakes until other side also becomes golden brown
  6. Enjoy!

You can add chocolate chips, blueberries or bananas to spice up this base pancake recipe. I like to eat them with maple syrup paired with some scrambled eggs on the side to create a more balanced meal. Pairing protein like eggs with the carbohydrates of our pancakes helps you to stay full longer and also helps keep your blood sugar more steady.
