Broccoli Cheddar Quinoa

- 1 1/2 cups Quinoa
- 2 cups Broccoli
- 3/4 cup Cheddar cheese
- 1/4 cup Parmesan cheese
- 1 tsp Garlic powder
- Salt + pepper to taste
- 2 1/4 cups water
If using a pressure cooker, add quinoa and water to insert pot. Place lid, close pressure release valve, and set to cook on HIGH for 1 minute. If not using a pressure cooker, following package instructions for stovetop cooking.
While the quinoa cooks, wash & chop broccoli. Boil for 5 minutes.
When quinoa is cooked, toss quinoa, broccoli, and remaining ingredients to combine. Serve immediately.
