Broccoli Cheddar Quinoa

Easy, tasty, and nutrient packed, this simple weeknight meal will be a guaranteed crowdpleaser.

Ingredients
  

  • 1 1/2 cups Quinoa
  • 2 cups Broccoli
  • 3/4 cup Cheddar cheese
  • 1/4 cup Parmesan cheese
  • 1 tsp Garlic powder
  • Salt + pepper to taste
  • 2 1/4 cups water

Instructions
 

  • If using a pressure cooker, add quinoa and water to insert pot. Place lid, close pressure release valve, and set to cook on HIGH for 1 minute. If not using a pressure cooker, following package instructions for stovetop cooking.
  • While the quinoa cooks, wash & chop broccoli. Boil for 5 minutes.
  • When quinoa is cooked, toss quinoa, broccoli, and remaining ingredients to combine. Serve immediately.
