Chop the celery and carrots to equal size. Dice onion, and mince garlic.
Add butter, celery, carrots, onion, and garlic to pot on medium-high and sauté for a few minutes.
Add ground beef to pot and continue sautéing.
While beef is cooking, chop potatoes into equal size chunks. (Peeling is not necessary, but optional).
Once the beef is cooked, add in potatoes, broth, and spices.
Cover and simmer for about 20 minutes, or until potatoes cooked through and can easily be pierced with a fork.
Ladle soup into bowls, top with generous amount of cheese. Serve immediately.
