If using old fashioned oats, blend in blender or food processor until they reach a fine powder to make flour. If using oat flour, skip this step.
Add oat flour, almond flour, chia seeds, and salt to medium bowl. Stir to combine.
Add coconut oil, peanut butter, maple syrup, and vanilla to bowl. Stir until wet ingredients are fully incorporated into dry.
Fold in chocolate chips.
Roll dough into balls with your hands, or use a cookie scoop to speed up the process, and place the balls on parchment paper.
Place in freezer for 30 minutes or until set.
Once frozen, transfer to an airtight bag and store in freezer for up to 3 months.
