Healthy Taco Soup

Ingredients
  

  • 2 tbsp avocado oil
  • 2 green bell peppers, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • 1 cup frozen corn
  • 4 cups bone broth or chicken stock
  • 28 oz canned tomato sauce
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp paprika
  • salt + pepper to taste
  • option toppings: shredded cheese, avocado, sour cream, cilantro

Instructions
 

  • Dice green peppers, onions, and mince garlic.
  • Add avocado oil, peppers, onion and garlic to soup pot or dutch oven, sauté on medium high heat until fragrant, about 2 minutes.
  • Add in ground beef and cook until browned.
  • Add bone broth, tomato sauce, and spices.
  • Cover and simmer on low heat for at least 20 minutes, but the longer the better!
  • Ladle into bowls, top with cheese, avocado, sour cream, cilantro, etc. Serve immediately.
