Dice green peppers, onions, and mince garlic.
Add avocado oil, peppers, onion and garlic to soup pot or dutch oven, sauté on medium high heat until fragrant, about 2 minutes.
Add in ground beef and cook until browned.
Add bone broth, tomato sauce, and spices.
Cover and simmer on low heat for at least 20 minutes, but the longer the better!
Ladle into bowls, top with cheese, avocado, sour cream, cilantro, etc. Serve immediately.
