Healthy Taco Soup

Ingredients
  

  • 2 tbsp avocado oil
  • 2 green bell peppers, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • 1 cup frozen corn
  • 4 cups bone broth or chicken stock
  • 28 oz canned tomato sauce
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp paprika
  • salt + pepper to taste
  • option toppings: shredded cheese, avocado, sour cream, cilantro

Method
 

  1. Dice green peppers, onions, and mince garlic.
  2. Add avocado oil, peppers, onion and garlic to soup pot or dutch oven, sauté on medium high heat until fragrant, about 2 minutes.
  3. Add in ground beef and cook until browned.
  4. Add bone broth, tomato sauce, and spices.
  5. Cover and simmer on low heat for at least 20 minutes, but the longer the better!
  6. Ladle into bowls, top with cheese, avocado, sour cream, cilantro, etc. Serve immediately.
