Perfect Crispy Roasted Potatoes

Ingredients
  

  • 1 lb baby gold potatoes
  • 3 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp sea salt

Method
 

  1. Chop potatoes into quarters or halves, aiming for roughly the same size
  2. Spread out potatoes evenly on baking sheet making sure not to overlap
  3. Drizzle generously with avocado oil
  4. Sprinkle with garlic powder & pepper (not salt yet)
  5. Set oven to 400° and place potatoes in oven (yes before it's preheated!)
  6. Roast for 1 hour or until golden brown with crispy edges
  7. Sprinkle with sea salt before immediately serving
