Sausage, Potato and Kale Soup

Ingredients
  

  • avocado oil
  • 1 lb ground sausage
  • 3 large carrots
  • 3 stalks celery
  • 1 large onion
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 3 tbsp flour
  • 5 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • salt & pepper to taste
  • 1 lb potatoes
  • 1 bunch kale
  • 1 cup heavy cream
  • 2 cups shredded cheese (I used mozzarella)

Instructions
 

  • Add a little bit of avocado oil to a skillet
  • Add the sausage and brown until cooked through. Set aside.
  • While the sausage is cooking, dice carrots, celery and onion
  • Add 2 tbsp butter into a hot dutch oven
  • Add carrots, celery and onion to the dutch over and saute for 4 minutes until fragrant
  • Add garlic and stir for one minute until fragrant
  • Add flour to thicken
  • Add chicken broth a little at a time and mix as you go
  • Add in dried herbs, salt and pepper and stir to combine
  • Dice potatoes into 1 inch cubes
  • Bring soup to a boil and add potatoes
  • Let simmer for about 40 minutes
  • While soup is simmering, roughly chop kale
  • Once potatoes are tender, add in the kale and mix until kale cooks down
  • Add in heavy cream and cheese and stir
  • Add in sausage and stir again
