Add a little bit of avocado oil to a skillet
Add the sausage and brown until cooked through. Set aside.
While the sausage is cooking, dice carrots, celery and onion
Add 2 tbsp butter into a hot dutch oven
Add carrots, celery and onion to the dutch over and saute for 4 minutes until fragrant
Add garlic and stir for one minute until fragrant
Add flour to thicken
Add chicken broth a little at a time and mix as you go
Add in dried herbs, salt and pepper and stir to combine
Dice potatoes into 1 inch cubes
Bring soup to a boil and add potatoes
Let simmer for about 40 minutes
While soup is simmering, roughly chop kale
Once potatoes are tender, add in the kale and mix until kale cooks down
Add in heavy cream and cheese and stir
Add in sausage and stir again
