Sausage, Potato and Kale Soup

Ingredients
  

  • avocado oil
  • 1 lb ground sausage
  • 3 large carrots
  • 3 stalks celery
  • 1 large onion
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 3 tbsp flour
  • 5 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • salt & pepper to taste
  • 1 lb potatoes
  • 1 bunch kale
  • 1 cup heavy cream
  • 2 cups shredded cheese (I used mozzarella)

Method
 

  1. Add a little bit of avocado oil to a skillet
  2. Add the sausage and brown until cooked through. Set aside.
  3. While the sausage is cooking, dice carrots, celery and onion
  4. Add 2 tbsp butter into a hot dutch oven
  5. Add carrots, celery and onion to the dutch over and saute for 4 minutes until fragrant
  6. Add garlic and stir for one minute until fragrant
  7. Add flour to thicken
  8. Add chicken broth a little at a time and mix as you go
  9. Add in dried herbs, salt and pepper and stir to combine
  10. Dice potatoes into 1 inch cubes
  11. Bring soup to a boil and add potatoes
  12. Let simmer for about 40 minutes
  13. While soup is simmering, roughly chop kale
  14. Once potatoes are tender, add in the kale and mix until kale cooks down
  15. Add in heavy cream and cheese and stir
  16. Add in sausage and stir again
